If we could customize the fits it would render all of the other BPOs (Quafe) obsolete. Customization is fun so locked prefit suits are mostly for new players.

Minmatar Assault should have the Assault Combat Rifle. As the fastest assault suit you want to run in and out of fire spraying bullets. The RE is fine, you usually can't blow up a tank with just 3.

You can swap a CRG-3 ADV for the same CPU/PG as the Dren Shotgun. It's hard to justify using it to save a few thousand isk.

There are counter tactics for the stomps. Usually a good stomping squad will have proto logi-heavy trains and constant scans. Often a heavy can weather full clips of enemy fire, even from proto weapons. High alpha strikes can work, like explosives...
