I have to say but matar women are a lot prettier than the other races. But that just my taste, athletic build, tone body, and them sweet legs.
But the Amarr women definitely without question have the biggest butt and you can never go wrong with big butts.

Minmatar are the best innovators and probably the meanest when backed into a corner. None of the other races really science! unless they absolutely have to. The Amarr got to a decent level of tech and kind of went 'yep, good enough'.
Amarr have the most efficient and reliable weapons - the vast majority are literally battery operated and could be recharged on the suits own power supply given enough time.
Caldari generally have the most well equipped soldiers: A) because they kind of hate loss of life for their own and B) because they don't have an issue with throwing money at problems.

You could argue that the Gallente's use of drones comes from the fact that they are the only empire that doesn't use drafted soldiers.
The best thing that CCP has done with their game is that NONE of the empires are really 'nice.' It is a hell of a feat of writing and I give credit to them. It would be so easy to say "Gallente are the only democracy so they are good, Minmatar are rebel slaves so they are good, Amarr is the Holy Roman Empire so they are evil, and the Caldari are basically corporate fascists so they are evil." Not really so. None of the races come off as evil or good in their backstory.
Methods of Torture for each race (word of warning: every one of these links is either truly cringe worthy stuff, in the case of the Gallente, or pure nightmare fuel that will stick with you, such as the Caldari. Take this seriously):
