i got another one, whipped it out from whats left of the fridge today
cooking oil Tortilla slice of ham just as large as the tortilla. cook both in the oil until the tortilla is nice and flexible and the ham slightly well done.
crack an egg, low heat, add a pinch of salt and pepper for flavor, add water to the pot and then close it, let it sit and make em sunny side up. open the lid every now and then to watch it's progress.
Chop and dice: half a tomato quarter of an onion (make the onion slices thin) cilantro mix well
optional: chopped jalapenos, seeds removed.
tortilla on the bottom slice of ham next sunny side up egg and the tomato-onion cilantro soup add some cheese on top
and done, you've made Huevo's Rancheros (Rancher's eggs)
best if made and eaten hot. |
