It's the same concept as magnesium and potassium being pretty volatile metals on their own (try dumping a lump of raw potassium in water, or using setting fire to a pure magnesium ribbon). When they're alloyed however, they lose a lot of their volatile properties. For instance Magnesium alloys are used to produce lightweight alloy wheels and engine parts for cars and trucks. It's the same for tritanium. The issue that EVE's ships have isn't based around the volatile nature of tritanium, they simply aren't designed to fly in atmosphere. They're far too heavy, they don't have the right aerodynamic properties, and don't possess the correct control systems for air flow management to be able to manouvre correctly.

I actually just sat and wrote that out over the course of about 5 minutes to respond to the question
