The Oculus Rift is pretty much the lowest resolution of all the screens I have around me. I run Eve at roughly 5600x1080 @ 120hz with it stretched out across my 3 lower monitors. That is with all settings set to max. I forgot to mention that EVE is one of the least graphically intensive games in existence. I was distracted while writing that post and just hit the button.
As an example, every ship except T3 cruisers is only a 1024x1024 bitmap. All of the effects have been redone in recent years to make them as efficient as possible to render, as well.
The real beauty of EVE Online is that it looks so good with how cheap the visuals are rendering-wise.
