Yup it's very easy. Just make sure you have a caddy - my old 60GB fat PS3 came with one as it came with a hard drive in the first place, but when I had to replace that with a 12GB slim model (12GB of flash as opposed to an HD) that model doesn't have a caddy. They cost about 3 GBP.

We're talking about the merits of SSDs, and whilst the throughput you're talking about can make a difference, and certainly cannot exceed 1.5GB/s on the SATA interface the PS3 uses, it is the access times that give SSDs a clear advantage.
The rpm (spindle speed) you mention only applies to mechanical drives; there is no rotation involved with SSDs.

You're quoting SSD prices from a long time ago.
SSDs can be had for 25p / GB these days. Prices are still dropping too, and the rate is set to increase with 3D NAND tech.
