They're a huge and diverse star-spanning empire. There is no simple answer.
I do think that there would be a very big and very profitable 'idol' industry (possibly with some seriously shady ends like south korea's 'slave' contracts where your label basically owns you financially). After all wasn't Aura aka Excena Foer the voice of eve for capsuleers a galentean?

A typical gallente concert In general the macross universe has some decent representations of what gallente music would be like.
Unfortunately I feel like a lot of the common caldari would be standing there screaming "YAKK DECULTURE!" and I don't know exactly how that makes me feel.

Based on the minmatar origins and the fact that even now they're very tribal, there'd probably still be a great deal of group performances like the Maori Haka. Or they could have stuff like Zulu chants (NSFW video) which are huge communal events, or even smaller things where contests of one-upsmanship in the dancing and lyrics of individuals are present.
There would also be conventional gallente influences present too, because there's a lot of cross cultural bleed... except for when a patriotic minmatar youth murders a gallente youth for having minmatar tattoo's that he has no right to.
Minmatar are also purported to have ****ing wild orgies on special festivals.

Never seen one in person, but I'm well aware of its history. Maori were cannibals sometimes and the sticking out of the tongue was both incredibly rude/insulting and a "I'm going to eat you!" also "Behold the hairy man who reigned in the sun that it may shine!"
