That depends.
Basically in New Eden all races have equal access to technologies, training, etc and from there you can be anything you like. However I find it helpful in games like to to be something you ideally like, especially if you want to RP, or start themes for any specific reason.
The four basic races as I am sure you know are the
Amarr- Who inhabit the largest of the four sprawling empires ruled over by a single Empress. The Amarr believe that their God has given them the divine right to spread their Faith across the cluster and Reclaim the lost aspects of mankind. The practice a form of slavery where the captive is cared for a taught by their owners and eventually emancipated to become citizens though this process can take generations depending on the Holder (slave owning noble) involved.
Caldari- A small former client state of the Gallente Federation who broke off after tensions between them and their patrons caused the Gallente to bombard their home world from orbit. The Caldari are a dutiful people whose sole purpose is to serve the collective that is called the State. They are socially broken down into megacorporations who see to their basic needs, organise their marriages, and oversee all facets of life.
Gallente- A massive democratic federation of worlds that champions human civil liberties and the ideal of freedom. They the most liberal of all of the greater empire and are an open and tolerant people who delight in entertainment, drugs, and the potential of vertical social advancement. They've been rather interventionalist when it comes to the previous two empires as they directly clash with their own ideals and were partly responsible for founding the Minmatar Republic.
Minmatar- A race of formerly desperate tribes who were once completely enslaved by the Amarr Empire and have only recently freed themselves in an event known as the Great Rebellion but also at great cost. They are unified by a collective need to refound their society and their deep seated hatred of the Amarr who the actions in the past. They are an angry and passionate people given to rash acts however they are also ingenious engineers and very adaptive when it comes to new situations. They are also eager to remind everyone that they are their own people which has caused tension with the Gallente.
Aesthetics wise
Amarr are visually elaborate within gold and silver colours in their weapons and armament as well as rounded designs. They also fire beams of energy and electro laser projectiles and often have the theme of purification through immolation as a part of their theocratic nature.
The Caldari are very basic and functional. Their designs are simple and uninspired with simple armour plating over the key areas of the body as well as simple weapons that look fresh from the factory. They fire Hybrid Rail projectiles (aka railguns) and hit hard at long range.
Gallente are brawlers. They get right up in your face like a Jin Mei ***** at a drug fuelled Gallentean high school mixer (true story) and use superior fire power and plasma based weapons to tear apart their enemies. They use very uniquely styled fire arms that encompass rounded designs with dropsuits that have a distinctly biological appearance.
Minmatar are the scavengers and "rebels" of New Eden and use low tech solutions to the high tech problems. Projectile weapons, IED's, and very primitive exoskeletons re-purposed from old mining tech with a bit of duct tap and some rust encompass their aesthetic. They look tough, impromptu, and slightly intimidating.
Do you like any specific themes (or care about them) or perhaps want to know more about hybrid factions or more about a specific faction?

BULLSHIT! The Amarr are not shield tankers. Please...please don't give people the impression they are.
