Gal assault is a wonderful suit, very flexible for many different applications. Almost everyone elses options for speed/gank/tank are all viable.
My go to proto is as follows, but it's a real tight fit, needs some fitting skills up there to complete.
Two enhanced plates: Complex slows you down too much imo, enhanced gives plenty of buffer and retains enough speed to keep me happy and away from heavies, {seriously, you don't want Caldari/Minmatar sentinels running faster than you do, it's terrifying.)
Three complex reppers: Constant 30 hp/s? Yes please! Repping through damage by popping in and out of cover every 3 seconds and already having 100 extra hp is ~soooooo~ gratifying.
One or two complex shield extenders: I know shield is dirty squid territory, but I almost always run an extender on my fits above standard. It provides a nice buffer against CR and RR users who get the drop on you and it gives you time to react or GTFO before they start tearing into your armor. This is where you can make fitting sacrifices if necessary, drop one of them down to advanced if the rest won't fit.
One or two complex damage mods: ARs and damage mods on Gallente fits are absolute law. I always run one light and 50% of the time the second damage mod will be for sidearm damage as I use the ion pistol -constantly-. A damage modded IP tears everything up, no exceptions, (unless of course they're greater than 30m away, then you're boned...)
Proto Gallente light weapon of choice: I love them all, but nothing beats seeing Federation Duvolle Specialist Assault Rifle pop up on the killboard. Also it helps with fitting being a specialist variant. Standard fitting for a Duvolle is 90-13, having your skills up on the specialist drops the requirement to 30-3.
Ion Pistol: I stick with the basic variant. I find it kills everything just fine and dandy as it is, especially if coupled with a complex damage mod.
Locus Grenade of your choice: I like M1s. Basics if your fitting isn't up to snuff. Cores will also fit if you sacrifice elsewhere. I insist on locus though as your damage modded AR and IP tear away shields anyways, go for the kill!
Basic Nanohive: They work. If you sacrifice grenades completely and have stellar fitting skills, you can actually fit the advanced hives that also give 20hp/s and those do wonders for real tight situations. Seriously, having that extra 40hp/s on top of your base 30 hp/s for 70 hp/s is ridiculous, you can solo brick wall small groups hard until you kill them/backup arrives/the nanohives run out....
