I just submitted a ticket to CCP to find out what is the precise formula used for calculating damage output on the knives. I'll let you know what's the status.

What's interesting is that according to Protofits using the Ishukone Nova Knives on a Minmatar Light Frame with Proficiency Maxed out as a control, one can see that the expected damage output is 1,150 HP total assuming two hits and a charge multiplier of 2.5x.
This without suit bonus because the knife is fitted on a light frame and this is before sidearm damage mods are applied.

Here is one with the suit fitted for maximum knife damage possible.
Base knife damage is at 347.25 HP per blade. Assuming the above calculations, that brings it to a whopping 1,736 HP (rounded down).

Anyways, yeah. I have no idea why it dealt 361 per uncharged hit. He made sure it wasn't a headshot. As stated earlier, it's possible that just tapping R1 counts as a small portion of the charge and therefore adds a certain bonus.
