It will come in handy in CQC combat if you're in a building and an enemy is on the other side of the wall but even then you will not be scanning scouts thanks to CCP's "great" scout rebalancing . You will be scanning Medium Frames and heavies if anything so one Complex Mod should be enough as long as medium frames do not decide to dampen with that extra slot.
Even then your speed will not help you with the scanning so it's best to dump it altogether.
If you want to be point defense and stack plates I'm not sure the Assault suit is for you honestly, you can make some defensive builds with it yes but by judging by your fitting you just want a lot of HP so a Gal sentinel will do you much better than a Gallente Assault.
Keep in mind with Gallente Assaults you should try to meet 3 basic Criteria:
Armor Rep above: (8 hp/s Basic) (12 hp/s Adv) (16 hp/s Pro) Sprint speed above 7.34 all suits Armor above: (350 at Basic) (450 at Adv) (550 at Pro)
Anywhere in the range is a decent assault suit. Even greater if you can achieve more than that but this is adjusted for lower SP players.
