Minmatar would likely favor things like Mead, Spirits, or things made from herbs/flowers/nuts/creams (absinthe, liquers) and due to their tribal nature would probably have a very fond place in their heart for things that induced hallucinations likea absinthe, peyote or psychotropic fungi. In fact I believe there was an eve article that deals with a minmatar taking hallucinogens as a means of 'finding ancestral guidance'. You might even find some weird cases of things like fermented mares milk mixed with blood. When on duty, it would likely just be straight water or honeyed substances.
Caldari would favor simple grains turned into alchols, so stuff like sake, whiskeys, ryes, etc. The caldari homeworld had a notoriously harsh environment though if I recall correctly. The caldari would also probably be fond of things like fermented milk alcohols. Generally fairly sober people, the caldari don't drink often but when they do they get drunk hard and fast. They're very against hallucinogens. When they're on duty, they drink teas.
Gallente would be fairly similar to caldari due to their sheer proximity. Either beers, spirits, whiskeys, etc would all be applicable here, though the gallente culture and personality would likely favor much harder alcohols mixed with pleasant tasting and visually pleasing substances. Association with Minmatar and the very 'permissive' mindset of the gallente also favors hallucinogens. When on duty, they drink soft drinks.
Amarr have the largest number of agriculturally oriented worlds and nigh unlimited access to exquisite fruits, spices and herbs and as a result favor things like fruits turned into alcohols, generally with pleasing spices and woody tones... so you'd see stuff like wine, brandies, hard ciders, ginger beer, rums, etc. The amarr drink frequently, but seldom with the intent of actually getting drunk, it's more an accompaniment to a great meal etc. Interestingly enough they'd probably also have a very large selection of teas and coffees. Very young amarr would probably end up drinking juices, but at the age of around fourteen or so it would be considered acceptable to drink wine with the family.

That is actually a highly ritualized ceremony dating back to the years before we took to space, the tea may or may not be poisoned and even if it is, the poisons used are almost always potentially surviveable. You would have had to displease someone you served immensely for them to offer you an incredibly lethal poison... Or they'd have to be an arrogant, dogmatic, jingoist to kill you like that. The point of the tea ceremony is both the deception and uncertainty to whether the tea is poisoned and the chance of survival if it is, the mere act of your superior demanding that you gamble your life to atone for your failures, not being poisoned is an honor, surviving is an even greater honor (so much so that it can more than redeem your failures).
