Complete noob when I started. Didn't know anything about EVE lore. But the Gallente sounded like the good guys and I liked their emblem with the eagle (still the best racial symbol). But knowing what I know now, I'm closer to the Amarr and the Caldari.
And basically I want the amarrian merc quarters. Soft golden lighting and that shiny floor.
There's something cool about every race though. Minmatar weapons for examples, just look badass.

I chose Amarr in Dust because I was Amarr in EVE.
Now, here's the reason why I started Amarr in EVE. I was looking at all of the different ships on these ship size comparison charts and I thought that the Amarr looked the best. So I picked Amarr based on aesthetics, and I wasn't disappointed 
I'm still waiting for my Amarr vehicles here in Dust  They'd better look as awesome as the ships do in EVE. I love the concept art for the HAV and dropship from Fanfest 2013.
Also lasers.

Why did you choose your race when you were brand new and didn't know a thing? Did you change later because it mattered to you? I read some posts from players very proud of their race and disparaging of others (ie "Caldari scum").
Just curious.

When I was new, choosing a race had no bearing what so ever, your starting "class" determined your starter gear. I chose minmatar based on the backstory, them being freed slaves and all. Now I run gallente gear because I'm better in a slugfest than a flanking role. And minmatar starter gear is the worst.

I choose Gallente because the description is the same as my ideals. Plus, I choose Gallente cause their suit looks like Crysis and their eyes look like the Helghast soldiers....

I skimmed through all the dicriptions, then dicided witch suit looked the best. I got from the Amarr discription that they were the most elegant of the races.

I'd say walk in my shoes for a day, but you probably still won't understand.
