Yes~~~! I've been playing since Demons Souls, but the games take place in different worlds, so you do not need to play the predecessors to enjoy the game. There are a few references to the Dark Souls world, but I consider them more easter eggy than anything. Who knows? Maybe after DS2, you will want to give DS a try. A lot of people ended up doing that with Demons Souls after playing Dark Souls and it brought a sort of second revival to the game.

Yes and no. You can play offline and solo. You can also play online and summon help for a level (and also be invaded randomly by another character who may or may not kick your ass).
The way summoning for co-op works is the host needs to be alive (not hollow / zombiefied) to see these little white summoning signs in their level. You can summon two of any of these random people (a lot are pretty bad players) or you can coordinate with a friend and summon them for help (ask them to place their sign somewhere specific for you to find). There are no friends invites, so it's mostly random unless you coordinate it properly with a friend (that's what Skype and PSN chat are usually for). I dunno how the summoning system works in this game, but I would go by this calculator until it's been fleshed out.
