Depends what type of logi you want to be. If you're going to have a symbiotic relationship with a Sentinel then 3 plates 1 rep because you need to be able to survive the shitstorms your sentinel enters. If you're going to be running around helping the team where you can then 2 plates 2 reps because you'll get into a lot of smaller fire fights on a more frequent basis.
Just my opinion though, I haven't used proto Amarr logi much so I may not be the best to take advice from.

I would go no less than 2 reps. If you can fight reps are more important.
Even if you struggle aiming 1 armor plate wont really help that much.

Aero is right. When You don't play using rep tool try 2 armors, 1 complex dempner and 1 rep. Or shield regulator instead of dempner (but only when your shield is high).
Prepare few fits for every combination and then just find this one wich will be best for U.

Full time Amarr logi, though tbh I can count on one hand the number of times I pull out the proto suit (small corp guys like me are too po' for all that fancy gear)
TTK is a little low to go crazy with reps, though I guess it depends on what you do. I'd suggest 3 plates 1 rep for now. You already have the 5 base reps (until 1.8... sad face). With reptool I would honestly consider 4 plates and just keeping a rep hive handy, if you are following an over-aggressive heavy you are going to come under massive fire, reps won't help you when you're dead.

2 Complex Armor Repairers, 2 Armor Plates, 3 Complex Shield Extenders. Great for active combat. with the 20 reps/s and 700-800 HP, it's my favorite fit.

you know i always wanted a proto suit and when i finally got it i was dissapointed becasue i never use the sh*t  i can run a militia suit and get 30+ kills , i use my adv suit to fit extra gear and i use my proto like less than 1% of the time almost never i wish i would use my points for extra weapons or something. i love killing a proto user using militia or standard gear lmao rofl .

I use proto all the time now and profit when not facing a total pub stomp, if I die twice 192k isk I switch to free fit
