I only have just over 3 million SP into vehicles, mostly for dropships, so the real pros may have different opinions. However, I've been surviving longer and getting kills so my advice should enough to get you started.
First, avoid the militia dropships. They fly like bricks and will get you killed.
Missiles are definitely the best all around option for choice of weapons right now. Rail guns may have their place with hunting tanks but I've yet to use them effectively. This gives one vote to flying Caldari Assault since you'll be able to use the bonus.
You can test out all dropships now without skilling into a particular race. Just put a few points into both armor and shield. Eventually, you'll likely end up with specialized fits that use different racial variants anyway. I did that and I decided I like the agility of the Python. The Incubus feels a bit more stable but that stability reduces your ability to escape by a tiny margin.
I've been debating this one with myself for a while but I've decided that every one of my ships will now have an afterburner. Escape and evasion is a primary component of surviving on today's battlefield and the afterburner is critical to making that happen. Redline rails have a hard time hitting you when you are moving fast and you can outrun swarms.
I'm not on my PS3 right now but I think my current solo Python looks like this:
XT-1 Missile Launcher
Enhanced Heavy Shield Extender: For taking that first forge or rail hit. Enhanced Shield Hardener: For engaging under hostile situations. Complex Afterburner: Complex because I'm burning as much as possible.
Complex Powergrid Upgrade: To make it all fit
I'm having trouble making a crewed Python work with my current skills. I'm now working on fitting skills so I won't bother posting my current attempt. It's just too weak.
My transport ship is based on a Myron. I believe it has four high slots so I fit it similarly to the Python but with the MCRU. It already has a higher shield buffer but its agility is much worse so you'll need it. I also fit only standard launchers to make it all work. Hopefully, your passengers will be on comms to tell you when you are out of ammo.
I have a Logistics M-I suit that I use for flying. I carry uplinks, nanohives and a vehicle repair tool. If I take armor damage I land in a safe area and away from blueberries to hop out and fix my ship. I place one uplink at my vehicle spawn point and another somewhere high along with some hives. The extra WP are good because flying doesn't generate a lot.

Also, you'll need to practice resupplying. You'll need to get that nose up under the depot to get it to start refilling your launchers. In some cases you'll have to fly half your ship into a building so practice maneuvering a meter off the ground. You could recall your ship but if you have blueberries on board you won't have that option. It's just too tempting to steal your ship and lose it seconds later.

After flying the Python when I fly the Viper and even the Myron it feels like I'm flying through molasses with every rail gun trained on me. For some reason I can't land the Viper either. It's more of a poorly controlled crash or I end up hovering a few meters above where I want to be.
Every Python I lose costs 500K but I'll take that hit to have the control I want when flying.
