The city would be good for living in, but we're not after nice houses and restaurants. While a city is bigger, the outposts we fight over are likely worth more because of whatever function they perform; for example, I'm guessing Research Lab outposts are full of extremely valuable intel and equipment.
Also, giving them specific backstories and names would hurt immersion since they appear in the background on many districts on many planets, so its not just one city, its many cities (built in some standardized way). One explanation would not suffice. How much explanation is required anyway? people want to live on habitable planets, they build cities there, and live there.

It isn't really about giving the structures a backstory, but an actual purpose. Like you said, the Research Lab could contain valuable intel and equipment, but how do we know? In some maps there is the large pyramid-like structure which is said to be a storage facility. What does it store? Clones, prototype tech, blueprints? Getting to know why we are fighting over these buildings in the first place would be great for the immersion factor.
Maybe, but seems pointless to me. As long as you can think of plausible reasons why it would be valuable, its good enough in my opinion; as long as its not something an amusement park. We are mercenaries, we fight over stuff because someone pays us to, employers wouldn't provide extensive explanations, just the money.
