I want to try out derpships on my alt. I feel like this would be a good idea before I invest any skill points from my main.
My main reason for doing this is because I'd like to offer my piloting services in the beginning of pc matches. Being able to ferry my squad to objectives quickly.
My questions are as follows. What is the main difference between cal derpships and gal derpships? If my goal is speed, what would I need to skill into? Would you reccomend that I try out the assault variants? flying tips?

I would like to know these things as well. I don't think there's much you can do for speed other than afterburners, but note that air speed is getting increased on dropships in 1.7.
Have you visited Judge Rhadamanthus' channel? It's unequalled for derpship piloting help.

I know you're not new so please don't take this as insulting but, have you checked out Judge Rhadamanthus' training videos on Youtube and his thread? They're excellent tools for learning solo; however, if you do better with live feedback you can find many pilots willing to help in the 1st Airborne chat and the Learning Coalition chat. Several of us are willing to call in ships for you and give pointers. And if the timeframe works for you, the LC does regular trainings in PC.
As to the speed question, Caldari is more maneuverable with better acceleration, the Gallente are more stable and tankier. Afterburners are a must until you've leveled up your modules for more survivability, however for Caldari you might want to try an overdrive. Judge doesn't think ODs are worth losing the low slot but I think at lower tiers they can be helpful.
Assault drooships handle and accelerate sooo much better than standard variants, but look at the cost. If you want a transport, I'd invest in a standard ship with better upgrades rather than the ADS.

If you're going for speed, go Gallente. They seem to be faster and more manuverable. Also, you can easily strap on a turbo booster (or whatever the speed booster is called). Beyond that, with an Armor Repper, you can easily survive 1 hit, but on a Caldari ship, you're pretty much dead after 1 hit from a Proto Forge.
Assault Dropships are not really worth it tbh. It's a huge SP sink and grants little in return. Stick with the Standard or Militia.
As for flying tips, it's just something you'll have to learn yourself, but as everyone else said, Judge Rhadamanthus is very helpful.

Just to reiterate, find me or another pilot in the LC chat or 1st Airborne, we'll call you in some ships so you can see for yourself. I don't mind if a student crashes a Dropship or 2....or 5, as long as you want to learn.

couldn't disagree more about the assault dropship. It's a nimble craft, more responsive than the previous levels. I would wait until 1.7 next week to see what happens with everything, but I love my ADS and it's been a go-to for me whenever I need to try something different. To be fair, I also dropped something on the order of 20 million isk just learning how to pilot. Check Judge's video's out and you can save yourself a lot of effort, and possible frustration.

I use Gallente as troop transports and for game start insertions. The reason is that you can fit an afterburner without losing tank. This gives you speed and strength for a fast hard run into a hot zone.
So skill into the STD ship, the Grimsnes, Avoid the assault ship as it will be too weak with limited skill points and has less seats if used as a transport in PC. YOu can't fit the squad into an ADS.
Skill into afterburners, plate and armour hardeners. I raced (split screen over the same spot) and timed a gallente and a Caldari ship. took 14 seconds exactly for both ships to cover the same distance. So they seem to be the same speed even though the Gallente had 1 plate fitted.

We have been setting up private pc battles where our members are free to practice flying dropships for an hour or so. Would you be interested in joining us for our next training session??

i'm fully skilled into my python and mostly into my incubus ( all of it except 3% more armor hardener skill needed )

dropships are extremely fun and one of the most exciting things in the game, the idea that you can transverse across the whole map is an amazing feeling, just that 1.7 will make it even better, because av is getting nerfed!!!
