Lore wise it would be possible to select a clone's attributes when you as a buyer purchases them, however the going thing is currently we use stock clones built/grown to certain specifications to be able to handle the suits and weaponry we use in the field. As for making physical appearance changes it is definitely possible to do so but it would be too costly to use anything outside of the stock clones since life expectancy on the battlefield is honestly not long. However there are leisure clones, clones that have more personalised features for when we're in public. (There's honestly a lot to it if you think about the ideas of varying personalities)
As for mercs getting time off and R&R, there's little doubt about it. In the end they are still representative of human beings who, for the most part, made the choice to become that way, so it's expected that they would have desires for time off, have vices or other quirks that would apply to their social lives, or lack there of in some cases. The trick is that we are those mercenaries so we kind of create the lore in that regard.
A good place to view such things would actually be the Intergalactic Summit subforums. Remember that it is an in-character forum only; we do role playing there. Some things are in a more forum like context while others, such as the PIE Emissary and Second Hex Club, are more "physical" venues that we use for role playing.

When I say "physical venues" I mean they are like spaces that you as your character have to actually walk into and exist in. Imagine say Playstation Home except written out, I guess is the simplest way to put it. Where as the posts that are more forum like is like a forum and you're not directly interacting with other characters but only speaking to them, the physical venues are more direct interaction as though your character is actually standing there and walking around. Usually posts like this you would find that the first post holds a fairly detailed description of what the location looks like by the Original Poster.
There are groups of people and corporations who Roleplay. The best example is PIE Inc, an all Ammarian Corporation who fight solely for the Ammar Empire in FW and all RP for it. Notable members of PIE that you would mostly end up interacting with are True Adamance (Actual Character's name is Kador Ouryon), Aero Yasavi and Maikyl Metsar. There are others but those three are off the top of my head. There are others who fight for specific factions too , whether in a corporation of just as a group with similar interests, as most of New Eden is. Just note that just because you're character is born of a specific faction does not mean you have to fight for it. The Caldari and Ammar are allies and the Gallente and Minmatar are allies. There's tension even between them. I personally do a lot of my fighting in Minmatar Factional Warfare. I have a friend who likes fighting for Caldari but does not agree with their alliance with the Ammar. There are also other minor factions that you can read up on in the Eve Wiki if you're interested.
