Prices will always be chaotic in the beginning but will eventually stabilize. Although the initial supply won't affect it that much or for very long. If the market is over saturated at the beginning then players will simply stock up on what they want while the price is low; quickly burning through the initial over supply. It's neither here nor there honestly.

Anyone rushing to buy/sell at the beginning is taking a risk but it's their choice to do it. No matter how long they wait that initial supply will eventually be all used up and the market will stabilize itself. That's not going to make them get it done any faster unfortunately.

Personally I like this the markets will stabilize but just imagine a constant need to of weaponry to fuel there war creating a new job in eve. A arms dealer flying to the far reaches of nullsec to deliver arms to mercs to win the war for a price of course (would also give low income / low sp eve players a cool job)
