Im curious what people generally do with low level items they get from salvage that you can use but are not a suit or weapon you are specced into much. For example I have leveled up Min assault what do I do with the other race suits I receive? I considered using them up as basically "free" fittings to gain money through battles or I can just sell them back to market.

Use it or sell it. There is absolutely no point in saving it.
Reason one, you can't take it to the grave with you.
Reason two, Dust gets closer to death with each passing day, and the odds of you getting to transfer all your gear to a new version of the game are slim and none. And slim just walked out the door.
If anything, find a newbie that can use it and give it to them. Build up your in game Karma points.

Nice to see you are still in the game, Yummy. And I see you are still pursuing knowledge by asking some of the right questions. GǪAnd, uh, errGǪ I see you are starting to meet many of the, err "interesting" forum members who are still sitting outside in the parking lot with a tent, still hoping the game will fail and die somehow. GǪ.golly.
GǪ..Anyway, what you choose to do with your suruplus random non-specialized weapons depends on 3 factors:
How driven are you towards wanting a certain weapon/dropsuit specialty, pumping your SP on it every weekend like a mean drug habit, and only needing every extra ounce of ISK you can get towards achieving your goal? If you know for sure that "I want that darn CK-0 Assualt suit with lvl-5 Rail rifle proficiency and exactly lvl-4 Ion pistol reload skill", then you should sell back ALL your unrelated salvaged weapons---don't be tempted to experiment and fall behind in your career goal! That describes me. I sell my weapon salvage.
How interested are you in investments for the future? EVE is a game about converting one kind of resource into another for profit, not just a game about blowing people up. Your warbarge is slated to do interesting things in future, and the devs have already shown interest in turning it into a mini refinery that could convert loose gear/material into a profitable raw material like "nanites". If you are one of the players who wants to see what cool kooky "mining" opportunities develop in the game's future, you can hoard all your scrap, and your random weapons (especially ones with resale value above 11,000 ISK). This also describes me. I don't sell any gear or scrap that's worth more than 16,000 ISK.
How much do you help your squad buddies or friends you made in the game? Although direct trading is still tightly restricted for us, you can keep a big stash of cheap weapons on hand----and each time a buddy is strapped for quick cash, you should sell your stash to gain a a quick 300,000, and transfer that money to her account. CCP is always looking for players to utilize areas of the game in cool and socially innovative waysGǪ and I think looking after your buddies that way would be socially SUPER COOL!
The choice is yours, Yummy! New Eden is endless.

If you can use them then use them. You don't get much by selling them. People rather do it to clean assets.

If they're AUR items, I sell them. I like to keep an even amount of each type of suit and accidentally opening the AUR screen to buy more of something I was just trying to use up is annoying.
If they're basic and I normally don't use them but have the skills to, I play with them. They're throw away suits I use just to try something different. It's never a loss for me as I don't care about my KDR and I never intend to restock them. So if you're curious how it is being a heavy or trying out a shotgun, etc, etc, use 'em up.
If you have no real desire as you're comfortable and happy with what you run, sell em to keep yourself well stocked.
