That's difficult to answer since there are very few examples of Amarrian language from which to draw. Know that they do not speak any language we IRL know.
Some people use Latin to represent their language, some use a more Arabic-like scripts. Others have suggested it would be very advanced variation of judaeo or castillian spanish.
Additionally certain players have attempted to create examples of Amarrian languages. My signature features a poorly conjugated excerpt I pieced together from Amarrad, which is the ancient language the religious texts known as the Scriptures are written in.
That being said the mainstream Amarrian language is known as Amarrish..... here are some examples cut straight from EVElopedia.

("Tetrimon" means "Divine Devotion") [3] Armadillo-The strong armor and the way the Tormentor seems to be curling up on itself has given the Tormentor-class this nickname. [10] Vitra-To the Amarr, "Vitra" meant simply "life." Life itself. [11]
I personally like to imagine the language is written in either a Cursive script reminiscent of Arabic texts but spoken very differently though I have not yet reached a point where I can imagine what it sounds like.
