Hmmm, I know that elephants have a greater repertoire of type 2 gustatory receptors (bitter) as well as a greater diversity of (active) genes for olfactory receptor neuron types than other mammals. In addition, their range has considerable overlap with peanut cultivation. There is some evidence in the (sparse) literature on the topic that elephants may not have a fully functional T1R1+T1R3 receptor complex (glutamate/aspartate; umami). This may owe to their infrequent contact with rich sources of protein. Their diets also tend to be low in fats, possibly reducing the hedonic value of said tastant. A salted peanut would still likely hold some value for an elephant, as their diet would be low in minerals. Elephants are smart enough that you could actually perform sensory/taste tests using them as subjects. It's pretty clear that elephants do not naturally seek out and consume peanuts, but the question of liking is one of affect. I'm going to need a representative sample of at least 100 elephants and a bunch of peanuts to figure this out...
