Here's some tips from someone who frequently LAVs.
1. Use a Heavy suit. You need to soak up as much damage as possible in both Driver and Gunner positions.
2. Use comms and pre-plan your LAV squad. You can't rely on blueberries to recognize that your well fit Methana isn't just your typical militia fit Baloch. Try to find someone in your corp or set up an LAV squad in Squad Finder (Message me in game if you want to squad up sometime)
Basic Swarms SHOULD be able to kill your LAV, they're an AV focused weapon for that very purpose. That said the Methana is a really beefy vehicle that can take more than a few volleys. With armor fitting proficiency I can run the advanced turret of my choice, an armor hardener, an enhanced repair, and a militia scanner without much issue. They're most certainly cannons in the right hands.

Also, LAVs currently get 2-shotted by every serious form of AV. Even my best Methana gets obliterated by swarmers. The Saga is impossible to fit, and even the best fits underperform and the hardening effect makes it impossible to aim.
LAVs need buffed in Echo imo.
I really don't think the Methana needs touching, seriously the thing is fine.
The hardener effect absolutely needs to be tweaked though, like you said with the thing obscuring your aim its unacceptable in its current state. And the Saga is ****. Only viable shield LAV is the Saga-II and that's because it comes equipped with a 0CPU/0PG Hardener that never got hit with the nerf bat, doesn't obscure gunner aim when activated, and is still running at 60% resistance (lololol). And even with those buffs its only barely on par with the Methana due to its base tank being so low and the lack of any utility low slots to compensate.
The LAV class as a whole is limited by a number of factors.
1. Severe lack of slots which seriously lowers the number of viable fittings
2. Lack of utility based (think Scanners or the old Remote Repairs) low slots making the already stronger Methana even more useful because it can use a scanner in its high without sacrificing anything in the process
3. Base tank on Saga being waaayy too low.
4. Things like shield boosters being able to be interrupted which negatively effects shield tanking on vehicles across the board.
