This is my personal best theory behind 514.
Being that the game Dust 514 is developed in China and he Chinese culture puts great meaning and symbolism behind their numbers, I decided it was only logical to try and find the meaning of 514 symbolically, rather than say try and find page 514 in one of the lore books, or look up Bible/Koran/Torah/etc. passages that are labeled 5:14. This is what I found and I think it fits quite well with the theme.
5: Five stands for luck and its five blessings: wealth, happiness, longevity, luck, and prosperity, and the five elements: water, fire, wood, earth, and metal. It can also be a negative number and stand for 'not.'
1: One stands for beginning, origin, creation, and energy. It may also mean loneliness.
4: Four is largely considered an unlucky number as the pronunciation of the number is a homophone with the word 'death.'
If we look at the individual we might conclude a few possible meanings:
A) Blessings create death. Possibly meaning that the blessing of becoming an immortal has allowed us to kill and die without recompense.
B) No origin/beginning death. Possibly meaning No beginning, only death? Or maybe no beginning or end?
But the numbers can also have a different meaning when combined as well, so lets look at that.
51 means 'I want,' so that 514 might very well mean 'I want death' or 'I want to die' which might be the case after dying repeatedly in such nasty ways for so long.
14 is one of the unluckiest numbers meaning 'Guaranteed death' so that 514 in this case may mean 'No guaranteed death' alluding to your immortality.
And finally there's the number 514 itself, which when pronounced sounds like 'I Will Die' or I Am Dying.'
So there you have it. That's what 514 means. You're welcome.

These interpretations seem more Japanese than Chinese to me.

Shinde = die (she-n-day ---N is almost silent)

Yes, and when you say five, one, four in Chinese, it sounds like Wu Yao Si which is homo-phonic for "I will die" In Chinese.

The Japanese conscripted the Chinese script, that's why it's the same. The pronunciation is different but more often than not someone that knows Japanese can also read Chinese.

I'm pretty sure that you got it right, if not then that's what the devs should have done :P
However, even if it's right the Devs won't confirm it. So there is basically no way of knowing what the actual intended meaning is... The whole thing is pretty pointless tbh.

Dust = the endless cycle of life and death for those who believe in reincarnation, or in the biblical prophecy told to Adam by God "From Dust You Came and To Dust You Shall Return". Possibly meaning that in this game there is never any real death, only our souls becoming torment with the reality of final death at our fingertips yet never achievable to us because we became immortal. in short its probably saying "We cannot die".
514 probably what youv researched, so il try to combine the 2 statements.
"We Cannot Die, We are Dying".
in conclusion the title of the game Dust 514 means in short that we can never die yet we are dying for death to come to us permanently.
