Hey guys, I dont come here often but you guys are the ones to ask this sort of question to.
I will go out on a limb and assume it is English. That being said, what are the offical languages of the 4 main races of New Eden?
I remember something about Asian / Japanese culture influencing the Caldari (I think - my lore knowledge is limited)

Not strictly true however players identify the Roman Empire with the Amarr and tend to use that as a basis for the language...... its kind of tricking picking exactly what the Amarr are inspired by......
However the Amarr have what I imagine as two distinct languages. Their ancient language which could be considered Amarrad, and Amarrish being the more modern iteration of the language.

Khanid-Means "little lord" or "lord ling" and is an affectionate term generally given to a cherished friend. Mezagorm- Means Vision of god. Sefrim-Those that guard the high seats of heaven. Angels, which God ordered them here to protect the emperor against all evils that ever beset him. Semper Pax-Peace, forever. Vitra- To the Amarr, "Vitra" meant simply "life." Life itself.

There is no "English" or any equivalent of a universally spoken language. Amarrish and Frallente is probably the widest spoken ones, but far from universal. Communications between people with different tongues and no common language are done through translator implants. In general there is very little official lore about the languages, so most is fanfiction and worldbuilding derived from names.
As Kador said above, Amarrian language is usually based in Latin, but as said earlier, it can have influences in Hebrew and Yewish language. Khanid have their own dialogue if I remember right, as does the Sani Sabik cult.
For Caldari, the often used fanfiction language is Napanii, a mixture of Japanese words with Finnish morphemes and derirative structure. There's also a dialect among the Achur that we know of.
Minmatar don't have a universal language, as it is a combination of various tribes, all with their own languages and dialects. Sebiestor tongue is commonly accepted as the "official" langiahe though.That said, most if not all Minmatar languages are based around Scandinavian languages(but not Finnish, it derives from a completely different ugric language family) and m.Middle-Eastern and Central-Asian countries. Looking into the languages of Mongolia, Turkish, Afganistan and the like are good pointers.
For Gallente, they're much like the Minmatar with many different tongues and dialects to reflect their multicultural population. They do have an official language though called Frallente, mostly based on French with influences from other Southern European languages like Italian, Spanish and Greek.
Then there's the odd case of Intaki, which is a fully developed and fleshed out fanon language. It derives from Indian languages, mostly Hindi, so they're not related to Frallente at all. The dialects are divided into northern and southern ones, each with their own distinct sounds. Heck, if you really feel like it you can learn to speak the language through a full dictionary and a large .pdf file to explain its nuances, all found here.
