I currently have 3 of the 4 Racial Sentinels (on this account) with my eyes on the fourth and wondered, "Who else is overly invested in a specific role?"

You are deluded if you think you will be the only one skilling into Amarr HAVs. The only thing preventing me from skilling into vehicles is the lack of Amarr tech. I may not be an RPer but that doesn't prevent me from being any less loyal then you PIE guys xD

I went the opposite way and created four alts to dedicate to each race. I have every single racial role suit and corresponding racial weapons/equipment anywhere from Adv to Proto on each. This character pretty much only runs Amarr Assault with ScR/LR and Gal Scout with Plasma Cannon. I might pick my favorite heavy for it if we get another bulk SP event.

I usually play them to about half-cap each week, though I did give up on keeping logins going on most of them. It adds up quicker than you'd think. They're all all at 10-11mil. Just have to minmax the cores and weaponry carefully, which ultimately winds up giving them a more noticeable racial flavor than trying to max out everything.

Well, this game has a lot of options and you can do whatever you like. However, having the Sentinel in all races seems more limiting in terms of play style than skilling into different roles such as Scout, Logi, Commando or even ... sniff ... Assault.
I have proto Minmatar Commando and Logi, Adv. Amarr Scout (yes, Amarr) and will probably skill into Gallente Sentinel next as I need a heavy to hold down a point when otherwise outgunned. So this way I have a lot of flexibility. This comes in very handy when running solo, especially.

Across my alt legion, I have the following at proto:
Amarr scout, Amarr assault, Amarr logistics
Gallente scout, Gallente assault, Gallente logistics, Gallente commando, Gallente sentinel
Caldari scout, Caldari logistics, Caldari sentinel
Minmatar assault, Minmatar logi
Am looking at speccing the other sentinels atm.

I pick and choose what I like about a suit for a specific role and get on that one for example I have
Minny logi - for repping bonus
Went gall scout before the other scouts got introdued and specced into it again because of the scan range that was possible (nerfed without reason Sigh)
Amarr heavy because of heav v heavy battles and I do have the BPO
Wen gall commando because of the bonuses to my plasma cannon
Don't know what to get for caldari

All of those Sentinels are in Inventory with all of the Gallente Racial and a Minmatar 'Sever' Logi.

3 of the 4 Logis (stopped at lvl 4 Cal because I looked at the SP required and though what's the point? Only thing I ever use it for is to drop hives)
Gal and Cal scout. Gal I had before the scout buff since I had the dragonfly, Cal post buff because f*k Gal scouts
Just took minmando to 4, haven't tried it much.

Already there with Logi, making strides towards having it with Heavy and Scout, then I'll round it out with the Assault....
So on an entirely unrelated note, when's the next triple SP event?
