At the moment, Templar One by Tony Gonzales is the only novel specifically focusing on DUST 514. There are also many chronicles you can find from the main page's Media section.

I want to write my own Dust514 novel that will be considered canon. I'm curious about how I go about doing that. Got any idea who I should email or the web url that has information on how to accomplish such a task?

Unless you happen to be working for CCP, nothing you will write will be considered canon. CCP is very cautious about acknowledging any fanfiction created by the community, not to mention that such a person has to be extremely knowledgeable of the New Eden universe.
The simple answer is, you can't write canon.

I am not an expert on New Eden, no. I am, however, a fairly skilled wordsmith who, with the help of a CCP-approved editor, can write some good stuff.
Also, just because it hasn't been done yet, doesn't mean it cannot be done. Still, guess I'll just mosey on over to CCP and see if they have something on their site about it.
