Anime usually bases itself on the original Manga, most of which is quite lengthy. Every show only retains an audiences attention span for a certain amount of time, however, and animating an entire manga series panel for panel can take a very, very, very long time.
Depending on whether or not the show catches on, they cut certain parts of the manga out. Usually a lot.
Sometimes they don't expect the show to catch on at all, but still feel the need to waste our time. So they take the manga, cut it all down to one or two seasons, leave out incredibly important plot points, insert filler characters while removing canon ones, and wrap everything up in an awkward and embarrassing fashion that makes everybody ashamed they ever saw it. |

But then there's the most annoying reason: Anime often tend to draw away from the manga story and go off on it's own plot line. Most of the time - this just ruins the show, leading to people dropping it in disgust. Example of this: Claymore and Rosario Vampire.
And last but not least: Sometimes the anime comes out too early too quickly - catching up to the manga it's pulling it's story from. This leads to an eventual 'stall' that has lead to the creation of 'filler' episodes for popular series - and simple death for not popular ones. Example of this: Naruto, Bleach, One Piece, and D.Grayman. Although Naruto is likely to eventually get an ending, honestly. The other shows? Nope.

Anime is not off topic. What many fail to see is that these Anime coalition members are using top secret bulging shiny anime eye code to debate about how their corps are better than the other. Many don't see this but I do... So basically, this topic is War Room related, but the politics and secret codes behind their posts are too complex for the average viewer. Look at the big channels, ABC, FOX, etc. They cancel even the good stuff after a season or two.
Cartoon Network and Disney have been doing the same as well. Young Justice(which was pretty mature for a Saturday Morning Cartoon, sorta-90's Spider-Man in tone), Green Lantern, Beware the Batman, Spectacular Spiderman, Earth's Mightiest Heroes, etc. I only watch Adult Swim with the exception of Agents of Shield, the Blacklist, and a few other shows. Rick and Morty is boss time for a new show but I digress.
Anime's have a more complex relationship. Tankabon sells along with popularity from magazines like WSJ definitely play a part in keeping animes going. There's also show views and filler and other things that play a part.

You're objectively wrong about most anime ending in 2 or 3 seasons, that is only the stuff we in the west are interested in, the stuff that fansubbers sub.
Cartoons in America are largely controlled by toy makers, If the show moves merch, it will go on forever, if it don't then it ends.
Anime in Japan is largely marketed towards children and otaku, a vast majority of anime is aimed at kids. Wheres manga is far more accepted, anime is seen as childish.
Off the top of my head, some of the longest running and most popular anime of all time are Anpnman, Doraemon, ojarumaru, Kirin no monoshiri yakata and maruko-chan all of which have 1000+ episodes and are clearly children's cartoons.
Anime like Eva, Gits, Monster, Eden of the East, Time of Eve ect ect, stuff not aimed at children are really niche stuff.
For instance, your average anime BD gets about 2k sells where Detective Conan merch flies off the shelves.
Of course there are exceptions, shows like The Cure series that have a decent following around anime fans in the west despite being a show obviously aimed at little girls.
Cure Sunshine is best Cure.
I'm just going of on tangents but..
A lot of Anime adaptions of manga/light novels, Claymore, Berserk Original TV, Hellsing Original TV, Boogiebop, Trigun, First Full Metal Alchemist TV, Full Metal Panic, ect ect seemingly go off on their own plot lines because the source materiel has in fact run out. The Show caught up with the Manga or in many cases Light Novel and the contract with the studio dictated that it must end, so they just make up an ending.
Many recent Anime are adaptions of Light Novels and not manga.
Sword Art Online is trash, Log Horizon is best. |

A manga you nerds should be readin is onepunch-man, Its about a part time hero who defeats everything with one punch.
It was originally a Web comic by an Artist named "One", a very very poorly drawn series, Then the artist of Eyeshield 21, Yusuke Murata, Started redrawing the web comic in is awesome Art style and now it is simply amazing.

I'm just going of on tangents but..
A lot of Anime adaptions of manga/light novels, Claymore, Berserk Original TV, Hellsing Original TV, Boogiebop, Trigun, First Full Metal Alchemist TV, Full Metal Panic, ect ect seemingly go off on their own plot lines because the source materiel has in fact run out. The Show caught up with the Manga or in many cases Light Novel and the contract with the studio dictated that it must end, so they just make up an ending.
Many recent Anime are adaptions of Light Novels and not manga.
Sword Art Online is trash, Log Horizon is best. o.0 I learned a lot.

I also want to add that most animes are made thanks to Visual Novels and Light Novels, not mangas all the time, take for example Fate/Stay night series, the original series came from a Visual Novel while the prequel Fate/Zero came from a Light Novel, to be honest I think animes based from VN's and LN's are most accurate with their plot instead of animes based from mangas because like people stated before, the studios tends to change the story and add their own plot, this might happen because the original maga is: 1) Unfinished or 2) Very short.
I say that it's a waste of money if they make an anime with a different plot from the manga and then, years later, they make a new anime based entirely on the manga, one of those perfect examples is Full Metal Alchemist and Full Metal: Brotherhood.
