The Plasma Cannon, Laser Rifle, Nova Knives, and Flaylock have 3 prototypes for purchase while the Scrambler Pistol has 4. Everything* else has five or more.
*In the light, heavy, and sidearm section.

Ninjato, like all ninja tools, were made cheaply and crappily. They aren't as disposable as kunai or shuriken, but they aren't meant to be used long term at all. You want a Wakizashi... er... Minnizashi. A blade from one to two feet long qualifies as a Wakizashi.
As for a knife-sized alternative, a Tanto (Minto) would be a good Minmatar Nova Knife. A Tanto is a blade from six to twelve inches, and has been adapted into the common military Tactical Knife and training (originally called Tantojutsu).

Edit: To answer the OP, it's probably because they're newer or CCP can't figure out different variants(laser mostly)
Caldari and Gallente are both driven by very similar design philosophies. Almost literally in fact. They view the simplest, sleekest, most no-nonsense approach is the best. The Nova Knives are an example of this. Their race will probably get more contemporary weaponry boosted by Nova tech. Would PROBABLY have a shield bias. I'd say that leaves... Gallente, right? Give them a Progressive Knife, the vibrations cutting through thick armor, but the lack of energy behind it stymieing assaults on shields.
Need something fancy for the mace... besides just calling it a 'Smiter.' Megaton Mace? Using similar tech to the Progressive Knife, it uses vibrations to create a more massive blow on the downswing. Heavier, so it's harder to swing (low speed, higher power).
So in short.
Gallente: ProgKnife
Minmatar: Minto
Caldari: Nova Knife
Ammar: Megaton Mace
yes I know they all already have a boring knife, but that's no fun :c

The weapons shown were just racial knives. Boring, but practical. We can only hope there is more difference between them than just shield/armor bias or attack animation. It is unlikely they will have charge-up however, so we can only watch and wait.
